Fun fact: I used to get my capi from the owner of Graham Ave Meats who was pinched last year on extortion and mafia conspiracy charges! He was such a nice guy. He was always pleasantly surprised by my knowledge of Italian charcuterie and cheeses. He exclaimed to the entire deli once, “Pepato! No one asks about pepato! How do you know about pepato?!” He and his sons always gave me crap about making my own sandwiches and not buying finished ones from them.
